לחמניות המבורגר
לחמניות עגולות, רכות, טעימות ואווריריות, שאין כמותן כבנות לוויה להמבורגר איכותי. בניגוד למתכונים אחרים, הבצק של לחמניות אלה אינו חלבי ואינו מכיל ביצים (פרט לזיגוג). המתכון מתאים להכנת שמונה לחמניות.
המצרכים
לבצק:
- 600 גרם קמח חלה, או קמח לחם לבן
- כפית שמרים יבשים (3 גרם)
- כפית מלח (6 גרם)
- כף סוכר (15 גרם)
- 150 גרם רסק תפוחים
- 10 גרם מרגרינה רכה
- 220 מ"ל מים
לזיגוג:
- ביצה אחת
- כף מים
- שומשום
הוראות הכנה
מכינים את רסק התפוחים, לפחות שעה מראש: מקלפים תפוח בינוני וקוצצים אותו לקוביות קטנות (ללא החלק של הגלעינים, כמובן). מכניסים לסיר קטן, ממלאים מים עד לכיסוי הפרי ומבשלים על אש בינונית, עד שהתפוח התרכך היטב. מוציאים את התפוח והמים מהסיר, ומעבירים למערבל מזון. טוחנים למחית אחידה ומעבירים לקערית, עד שהרסק יצטנן.
מכינים את הבצק:מנפים את הקמח לקערה גדולה. מוסיפים את השמרים ומערבבים היטב, לפיזורם בקמח. מוסיפים גם את הסוכר ואת המלח ומערבבים שוב.
שופכים לקערה את רסק התפוחים ו-50 מ"ל מהמים ומתחילים לערבב. מוסיפים את המים בהדרגה, עד שנוצרת עיסה אחידה ורכה. שימו לב – ייתכן ולא תזדקקו לכל המים, מאחר ורסק התפוחים מכיל נוזלים בעצמו. לשים את הבצק במשך כעשר דקות. במהלך הלישה, מוסיפים בהדרגה את המרגרינה לבצק.
מגלגלים את הבצק לכדור הדוק, מניחים בקערה משומנת ומכסים בניילון נצמד או במטלית לחה. מתפיחים את הבצק עד שיכפיל את נפחו, במשך כשעה עד שעה וחצי.
בגמר התפיחה הראשונה, מוציאים את הבצק למשטח מקומח ולשים אותו היטב, להוצאת האוויר מתוכו. חוצים את הבצק לשתי חתיכות שוות. חותכים כל חצי לארבע חתיכות שוות. מומלץ להיעזר במשקל, על מנת לוודא שחתיכות הבצק במשקל דומה.
מגלגלים כל פיסת בצק לכדור הדוק, ומניחים את כדורי הבצק על גבי מרדה או תבנית מכוסה בנייר אפייה. חשוב להשאיר מרווח מספיק בין כדורי הבצק, על מנת שתתקבלנה לחמניות עגולות מושלמות.
מכסים את הבצק במטלית לחה ומניחים לתפיחה שניה, במשך כשעה, עד להכפלת נפח הכדורים. מחממים תנור לחום של 200 מעלות ומניחים בתחתיתו תבנית ריקה.
בקערית קטנה, טורפים ביצה יחד עם כף מים קרים. בגמר התפיחה השנייה, מושחים את כדורי הבצק בתערובת הביצה והמים ומפזרים מעט שומשום מעל לכל לחמנייה.
לפני הכנסת הלחמניות לתנור, שופכים על התבנית הריקה כוס מים קרים, ליצירת אדים בחלל התנור. אופים את הלחמניות במשך כעשרים וחמש דקות, עד שהן מקבלות צבע זהוב-חום ונקישה על תחתיתן תשמיע צלילי חלול.
מצננים את הלחמניות על רשת למשך רבע שעה לפחות.
