לחם שאור בהיר עם גרעיני חמניות

לחם זה משתמש בשאור, אך בניגוד ללחמים הנאפים בעזרתו בד"כ הוא "קל" ובהיר (אין הכוונה שהלחם דיאטטי!). גרעיני החמניות מוסיפים ללחם מרקם, טעם וריח מיוחדים. השימוש בשאור מחייב זמני התפחה ארוכים מהמקובל בלחמים המשתמשים בשמרים תעשייתיים.

המצרכים

5 כוסות קמח כפרי (600 גרם)
כוס שאור (200 גרם)
כפית וחצי מלח
3 כפות שמן חמניות
50 גרם גרעיני חמניות קלופים, לא קלויים
כוס ורבע מים (250 מ"ל)

הוראות הכנה

מנפים לקערה גדולה את הקמח. מוסיפים את המלח ומערבבים, כך שיתפזר באופן אחיד הקמח. מוסיפים את הגרעינים ומרבבים בקמח. יוצרים גומה במרכז הקמח ושופכים לתוכה את השאור, את השמן ואת המים. מערבבים עד ליצירת בצק ולשים במשך כ-10 דקות, עד לקבלת בצק רך וגמיש.

מגלגלים את הבצק לכדור, מניחים בקערה משומנת, מכסים בניילון נצמד או במגבת לחה ומתפיחים עד שהבצק מכפיל את נפחו, בין שעתיים לשלוש.

משטחים את הבצק ומוציאים ממנו את האוויר. מרדדים למלבן עבה, באורך של כ-25 ס"מ וברוחב של כ-20 ס"מ. מגלגלים את המלבן, מצידו הרחב, עד ליצירת כרוכית. צובטים את קו התפר, לאטימה, ומקפלים את קצות הכרוכית כלפי מטה (לכיוון התפר).
מניחים את הכיכר בתבנית כיכר משומנת ומכסים במגבת מטבח או בניילון. מניחים לתפיחה שנייה, במשך כשעה וחצי עד שעתיים. (הערה: ניתן לחלק את הבצק לשניים ולהכין ממנו שתי כיכרות, אם משתמשים בתבנית לעוגה אנגלית).

מחממים תנור לחום של 230 מעלות. מניחים בתחתית התנור תבנית ריקה ורשת במסילה האמצעית. לפני הכנסת הכיכר לתנור, שופכים כוס מים על התבנית הריקה, ליצירת אדים בחלל התנור. חורצים, בעזרת סכין חדה, שני חתכים אלכסוניים על פני הכיכר ומכניסים את הלחם לתנור.

אופים במשך כ-40 דקות, עד שנקישה על תחתית הכיכרות תשמיע צליל חלול. לאחר כחצי שעה, מוציאים את הלחם מהתבנית וממשיכים לאפות בלעדיה. במידה וחלקה העליון של הכיכר משחים לפני שאר הלחם, מניחים יריעת נייר אלומיניום מעל לכיכר וממשיכים באפייה. מצננים על רשת.
