שלום,האם צריך להתאים מחמצות שעשויות קמח שיפון- לבן-כוסמין-לסוגי המאפים השונים? המחמצת שלי מבוססת שיפון מלא ובמאפה בו נדרש 250 גר מחמצת , יש לזה השפעה לא מבוטלת על המאפה . במקרה זה שזו תערובת קמחים זה משתלב. בלחם מבוסס קמח לבן למשל , לא רצוי יותר שהמחמצת תהיה על קמח לבן ?

האם השאור המצוין במתכון הוא הסטארטר או מחמצת שהוכנה מהסטארטר?

מתכון מוצלח מאוד.
בהעדר מולסה השתמשתי בסירופ אגבה ויצא מצויין.
ולגבי הדיון על הקמחים-
אני משתמשת בשיפון וכוסמין ביחסים שונים לפי המתכון (או העונה) ואין בעיות תפיחה, צורה וטעם.

האם ניתן להמיר את הקמח הכפרי (בכלל המתכונים של השאור) לקמח שיפון/כוסמין?
בעצם ליצור לחם שהוא כולו על טהרת השיפון/ הכוסמין...

בתור אחת שלא אופה יותר מדי ולא מגדירה את עצמה כבעלת נסיון עשיר בכלל אלא יותר עם רצון.
עם שאור צעיר מאוד ובפעם הראשונה בחיים עם שאור בכלל, הכנתי את הלחם הנ"ל ללא שמרים כלל.
נתתי לו לנוח /לתפוח כבצק כ12 שעות ועוד כשעתיים כצורתו הסופית. במהלך הכנת העיסה טעיתי ושמתי יותר מדי מים ולכן גם הוספתי יותר "קמח כפרי" ויותר קמח שיפון ולמרות הכל ואף על פי כן יצא לי לחם כמעט טוב מאוד :)

השאור שלי ממש עולל - בן פחות מחודש.
איך להתנהג אליו ואיתו במתכון הספציפי הזה?
