- 3 כפות מולסה (ניתן להמיר בקרמל)
- 350 מ"ל מים
- 50 גרם זרעי פשתן
- 50 מ"ל מים
הוראות הכנה
כשעתיים לפני תחילת העבודה, משרים את זרעי הפשתן ב-50 מ"ל מים. מכסים את הקערה עם הפשתן וממתינים עד לספיגת הנוזל בזרעים.
מנפים לתוך קערה את קמח הלחם, הקמח המלא ואת קמח השיפון. מערבבים היטב עד ששלושת סוגי הקמח מעורבבים היטב זה בזה. מוסיפים את המלח ומערבבים שוב, לפיזור אחיד שלו בקמח.
יוצרים גומה במרכז הקערה ושופכים לתוכה את המולסה והשאור. מוסיפים את המים בהדרגה (כ-50 מ"ל בכל פעם), תוך כדי ערבוב, עד לקבלת עיסה דביקה.
לשים את הבצק במשך כחמש דקות, עד שמתחיל להתקבל בצק אחיד, אם כי דביק. אם הבצק דביק מכדי לעבדו, מוסיפים מעט קמח כפרי וממשיכים בלישה. לאחר כחמש דקות, מתחילים להוסיף את זרעי הפשתן לבצק, תוך כדי לישה. מוסיפים קומץ זרעים בכל פעם ולשים עד שהזרעים מפוזרים באופן אחיד בבצק. לשים את הבצק עד שכל זרעי הפשתן בתוכו ועד שמתקבל בצק אחיד, רך וגמיש יחסית.
מגלגלים את הבצק לכדור, מניחים בקערה משומנת, מכסים בניילון נצמד או במגבת לחה ומתפיחים, בין שלוש לארבע שעות. הבצק יתפח, אך לא בהכרח יכפיל את נפחו.
מחלקים את הבצק לשני חלקים ויוצרים ממנו שתי כיכרות צרות וארוכות. מגלגלים כל כיכר סביב עצמה, לקבלת צורה של "שבלול". בעזרת מברשת, מושחים את הכיכרות במים ומגלגלים אותן בקמח לחם. מניחים את הכיכרות על מרדה או תבנית מכוסה בנייר אפיה. מכסים במגבת לחה ומניחים לתפיחה שנייה, בין שעתיים לשלוש שעות
מחממים תנור לחום של 230 מעלות. מניחים בתחתית התנור תבנית ריקה ורשת במסילה האמצעית. לפני הכנסת הלחם לתנור, שופכים כוס מים על התבנית הריקה, ליצירת אדים בחלל התנור ומכניסים את הלחם לתנור.
אופים במשך כ-40 דקות, עד שנקישה על תחתית הכיכרות תשמיע צליל חלול. מצננים על רשת כעשר דקות.
