200 גרם קמח לחם לבן
רבע כפית שמרים יבשים
200 מ"ל מים

לבצק

500 גרם קמח לחם לבן
50 גרם סולת
כפית וחצי מלח (7 גרם)
כפית שמרים יבשים (5 גרם)
כף דבש (15 גרם)
שתי כפות שמן זית (30 גרם)
40 גרם עגבניות מיובשות, קצוצות
חופן עלי אורגנו טריים, קצוצים
420 מ"ל מים

הוראות הכנה

מכינים את הפוליש:מכינים את הפוליש: מנפים את הקמח לקערה קטנה, מוסיפים את השמרים ומערבבים היטב. יוצקים את המים לקערה ומערבבים עד ליצירת עיסה אחידה. מכסים את הקערה בניילון נצמד ומניחים מחוץ למקרר למשך לילה – בין שמונה לשתים-עשרה שעות.

מכינים את הבצק:יוצקים את המים לקערה גדולה, מוסיפים את הדבש ומערבבים היטב. שופכים את השמרים לקערה ומערבבים, עד שהם נמסים. יוצקים את השמן לקערה.
לוקחים קערה נוספת ומנפים לתוכה את הקמח. מוסיפים את הסולת ואת המלח ומערבבים היטב. מוסיפים את העגבניות ואת העלים ומערבבים היטב. שופכים את תערובת הקמח לתוך הקערה עם

הנוזלים, תוך כדי בחישה. שופכים את הפוליש לעיסה שנוצרה ומערבבים היטב, בעזרת כף מעץ, עד ששתי העיסות מתאחדות. מכסים את הקערה בשקית ניילון גדולה, או במגבת מטבח לחה, ומניחים לעשר דקות.

לוקחים את אחת מקצוות הבצק שבקערה ו"מקפלים" אותה על מרכז הבצק. חוזרים על הפעולה כעשר פעמים. הבצר יהיה רטוב ודביק מאוד – לא לדאוג. מכסים את הקערה שוב ומניחים לרבע שעה.
